Who does not love chocolate desserts? I love anything that has to do with chocolates, especially dark ones. This recipe here is all about making a very quick and simple chocolate ramekin cake. You can also make this in any mug of your preference. This is an absolute go-to recipe if you are craving something chocolaty but you do not want to make a large batch. Or this can come in handy when you got to make a very quick dessert for your visitors as it only takes less than 10 minutes to prepare the batter and 1 minute, yes literally 1 minute to be ready in the microwave. Now, can you imagine how convenient that would be?
Another amazing news is that the 7 ingredients needed to make this ramekin cake are our almost always readily available kitchen ingredients. This is an egg free recipe and suitable for vegetarians. Here goes the list of things that you have to prepare beforehand:
- Butter
I love using butter in my recipes because they bring the best flavor out of any desserts that I’m preparing. I became a fan of butter 2 years ago when I started using them more than margarine. Right now, I am devoted to Anchor Salted Butter. I love the creamy texture and melt-in-the-mouth taste that they offer.
- Molasses
The reason I’m using molasses or brown sugar in my recipes is for the darker colour it gives the baked items. I pick them when I’m making any chocolate based recipes.
- Cocoa Powder
Here comes the main ingredient. I use Extra Dark Cocoa Powder for this recipe. But you can use a regular unsweetened cocoa powder of your choice. Also, it does not matter whether you use a dutch processed cocoa powder or the natural one.
- All Purpose Flour – of any brand.
- Baking Powder
I am yet to try a ramekin cake without a raising agent but read that it can be done. If you are following this recipe, it is not advisable to skip this ingredient.
- Full Cream Milk
Most of my recipes contain milk because I love how they improve the flavour of a dessert by 100 % besides adding a protein source. If you are allergic to dairy, replace the full cream milk with water or non-dairy milk in 1:1 ratio.
- Vanilla Essence

1 tbsp cocoa powder
3 tbsp all purpose flour
1/4 tsp baking powder
*2 tsp molasses
1 tbsp melted butter
1/4 tsp vanilla essence
1/4 cup of full cream milk (60 mls)
Directions
- Mix the cocoa powder, all purpose flour, baking powder, and molasses in a bowl. Set aside.
- Mix the melted butter, vanilla essence, and milk in another bowl.
- Combine the dry and wet ingredients gently.
- Pour the batter in a ramekin. Microwave in 600W for 1 minute.
- Drizzle some melted dark chocolate and sprinkle with dusting sugar (optional). It is now ready to be served. Enjoy!
